Super Simple Mango Salsa

I just made a super simple recipe that I thought I would share with you guys. I am currently on an antihistamine intolerance diet, which means no tomatoes for me. It also means no salsa… and I am currently not ok with that. I can however have mangoes and if you have never had fresh mango salsa, you are missing out.

The mangoes at the grocery store are gorgeous right now, so I grabbed a few last time I was there. Mangoes are like avocados… unripe… unripe… still unripe…. RIPE…. and then sadness because they are immediately rotten.

Luckily I caught these at the right time and the time is NOW.

1 ripe mango cut into chunks
1 lime squeezed right into bowl of cut mango
1 handful of cilantro chopped
1/4 red onion diced
salt to taste.

That’s it! Good enough to eat by the spoonful, scoop some up with some whole grain chips, or try it spooned on top of some baked salmon with sticky rice … Which is exactly what I am going to do with it tonight!!
